So I stumbled onto this cookie exchange while browsing through blogs. You make a donation to ‘Cookies for Kids’ Cancer’, which help with research, etc., so it’s really a great cause, and a great way to get in touch with other bloggers in your country! (Not to mention new ideas and COOKIES!) At this point, I’ve received one package of cookies, and two are at the Post office, just calling my name. But of course, due to kids, one vehicle, snow, and other circumstances…. I haven’t gotten to them yet! But I’m itching to get my hands on them to find out what they are!

For my cookies, well, I didn’t know what to do. I was really going to do a traditional family recipe, but I scratched that and did the total opposite. Though, I’m not sure why. Anyhow. I’ve been wanting to try out biscotti for quite some time now, and it just seemed like a good chance to try it out. I didn’t know much about it, other than that it’s twice baked, and awesome dipped in tea/coffee/hot chocolate. I also know that I love cinnamon and coffee/tea/hot chocolate. So, 1 + 2 = cinnamon sugar biscotti. Or some such thing.

Here goes! Next time, I think I’d omit the coffee chocolate chips, and make pour some cinnamon and sugar on top of the cookies as well, but hey – first try, eh? Also, sorry for the non-natural-light-photos… I was crunching for time, and had to make them at night. 🙂

Cinnamon Sugar Biscotti
Crunchy biscotti + cinnamon and sugar!

Cookies
  1. 1/4 cup margarine, softened
  2. 1/2 cup sugar
  3. 1/2 cup brown sugar
  4. Pinch salt
  5. 3 eggs
  6. 1 tsp vanilla
  7. 2 1/2 tsp baking powder
  8. 2 3/4 cup flour
  9. Coffee flavoured chocolate chips (optional)
  10. 1/3 cup brown sugar
  11. 2 tsp cinnamon
Glaze
  1. 3 tsp milk
  2. 1 cup icing sugar
To dip
  1. 1/3 cup brown sugar
  2. 2 tsp cinnamon
Instructions
  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. Cream together margarine, and sugars. Add salt, eggs, and vanilla. Mix well.
  3. Stir in flour and baking powder until smooth. Fold in chocolate chips (if desired).
  4. Divide dough into 4 even balls. shape each into an 8 inch log, slightly flatten. Place two on the baking sheet.
  5. Mix together cinnamon and sugar. Sprinkle cinnamon sugar onto the two flattened logs. Cover with remaining logs and pinch together on the sides.
  6. Bake in oven for about 20 minutes, or until middle is set and slightly golden. Let cool on a rack for 1 hour.
  7. Slice diagonally into 3/4 inch strips. Place on cookie sheet, and bake at 350F for 8 minutes. Flip cookies, and bake for another 8 minutes. They should be dry to the touch. Let cool on a wire rack.
  8. Mix together glaze until smooth. Coat ends of biscotti with glaze, dip in second amount of cinnamon sugar.

  1. Great for dipping in your tea!

Whole Wheat Cinnamon Rolls

It DOES feel like fall.  And much too soon, in my opinion.  I’ve switched from shorts, a tank, and sandals to socks, sweaters, and leggings in a week.  From iced coffee to hot vanilla nut tea and hot chocolate.  (Not that it’s bad, just different, and MUCH too soon.)  I digress…

My counter.  Technically, it’s the desk my wonderful father made for me in elementary school, that I absolutely love.  But right now, it’s serving some time as a kitchen counter.  I was looking at it this evening after I put cinnamon rolls in the oven, and came to the conclusion that it’s a lot like my life.

Look at the organized clutter, the spattering of flour and cinnamon, the balancing of the laptop.  It’s got character, dents,scrapes, and doodles.  Lots of love oozes out of it when I think of the time and love my daddy poured into it as he made it.  (It’s got to be my favourite Christmas present ever.  Seconded by the hope chest he made me a few years later.)  My life is like my desk.  Organized, but in a messy, ‘only-I-know-where-everything-is-but-it-REALLY-is-organized’, kind of way.  Cluttered like my brain, jumping and crashing from one thought to the next.  Spattered like the laughter, screams, squeals, and tears of my family, throughout every day.  My life has had its share of dents and scrapes.  Doodles are the fun, quirky times.  So much love has been shoved into my life, and so much love squeezes out of me.  It’s give and take kind-o-deal.

There you go.  My life in a desk.  Didn’t think you’d ever come across that comparison now, did you?

On the other hand…

I may or may not need more counter space.  Either way, I had just enough room, in this cluttered mess, to make Whole Wheat Cinnamon Rolls.  I’m not going to share the recipe, I’ll just send you over to Piping Dreams for that.  But I did just want to say hey, and share a few photos.  Sorry (yet again) for being disconnected the past year.  Spring was crazy.  I thought, ‘Surely I’ll have some down time in the summer!’.  I was wrong.  Now that summer has flown by, and fall is at my heels, I’m thinking, ‘I must MAKE time through the fall and winter months!’.  Will it happen?  Only time will tell.

But for now, I leave you with cinnamon and clove scents wafting through my kitchen into yours.  As Lauren says in her post, these only take 30 minutes TOPS to whip up.  You can have your house smelling like mine in no time.  Or you can come over for coffee right now… or in the morning.  Whichever.

Whole Wheat Cinnamon Rolls

My hubby couldn’t wait for me to even get pictures, before he tried snatching a cinnamon roll.  What I didn’t tell him was that they were whole wheat.  Will he notice?  I haven’t heard any comments yet.  I’ll let you know.  (Sneaky wife here, trying to get him to eat healthier…  Do cinnamon rolls count as healthier?  Imma say yes.  Why not?)

Rhubarb Coffee Cake

Yummo!  (That’s what Sid the Sloth from Ice Age would say.  How do I know this?  Well, we’ve probably watched Continental Drift 100 times in the last few months, that’s how.  Cael has favourite-movie-streaks.)

Rhubarb is in season, so the time to use it is now!  And it’s sooo good.  Sweet, but with a balancing, tart bite to it.  Put it in a cake with some sugar, cinnamon, and nutmeg, and you have [as close as you can get to] perfection!  Now, I hear that some people don’t even know what rhubarb is.  To those, I have GOT to say, GO find some and try it!  Baked goods with rhubarb are awweesssoommmmeee *sing-song-y voice*!

I’ve made this cake twice so far, and it was a hit both times with both groups.  Can I just say that it is super yummy?  Because it is.  Cael loved it too!  He helped me make the first one.  I absolutely love working with him in the kitchen.  It’s super fun.  We made muffins the other day (recipe to come, perhaps?), and he was stirring and licking spatulas while doing a crazy dance number to Michael Buble’s new CD.  How much fun can you have?  How lucky am I?  Two sweet little guys, helping Mommy bake.  (And they are the cutest.  Ever.)  {Making muffins with Mommy below!}

Back to the cake.  So I made this in a tube pan.  The recipe called for a bundt, but I’m really glad I used a tube, because I think it would have been hard to get out of a bundt.  Your choice, of course.

Rhubarb Coffee Cake

Adapted slighty from Hodge Podge: A Collection from the St. John’s Anglican Church

1 1/2 cups sugar

1/2 cup margarine, softened

2 eggs

1/2 cup milk

2 cups well-floured, chopped rhubarb

1 1/2 cups flour

1 1/2 tsp baking powder

1 tsp vanilla

Pinch salt

Dash nutmeg

For this cake, you can totally go old-school and use a wooden spoon.  Do it.  Feel old school.  Mix sugar and margarine (with your wooden spoon) together well.  Add eggs, salt, and vanilla.  Mix in flour, baking powder, nutmeg, and milk.  Add rhubarb.  Sprinkle with ample brown sugar and cinnamon.  Bake in a well-greased tube or bundt pan for 50 minutes at 350.  (Or until the middle is set.  Stupid finicky ovens!)

As I’m copying this recipe down, I’m looking at the cookbook from whence it came.  And it was submitted by my grandmother!  Who knew?  I could have just gotten the recipe from her.  I thought it seemed a bit familiar!  Oh my…

Sorry this is such a smorgasbord of things today, but I really wanted to say Happy 3rd Anniversary to my hubs.  I cannot believe how fast those 3 years have gone!  He’s the best, most handsome hubby around.  Not to mention amazing friend and daddy.  I love you babe.

Dad’s Molasses Cookies

My dad eats almost anything.  Actually, he WILL eat anything.  But there are a few things he doesn’t like.  One of those things is celery – weird eh?  But there are many things that he does like.  And one of those things is Molasses Cookies.  When I was little, he was a stay-at-home dad for a few years.  And this was one of his specialties.  Surprised?  My dad can cook, AND bake.  He’s really good at it, actually.  Anyways, he used to make these for me all the time.  He even wrote by the recipe, “Kayleigh likes these”, to help him remember which recipe it was he used.  Now, he runs his own business, and doesn’t have near as much time on his hands to bake.  So, I make them.  For him.  I love baking when people love to eat my food.  🙂

Anyhow.  These cookies are the perfect cookie.  They are nice and moist and chewy, and stay that way for about a week (not that they last that long normally…).  I used to hate to make these (when I was 12 or so), because they are rolled cookies, and I though they took too long.  But now, I really don’t mind making them.  They are so good, and really don’t take that long [at all].  We found the recipe in an old hospital cookbook, but we made some changes to it (and they’re wayyy better now).

Dad’s Molasses Cookies

3/4 cup shortening

1 cup brown sugar

1 egg

1/2 cup molasses

2 1/4 cup flour

2 tsp baking soda

2 tsp cinnamon

2 tsp ginger

1 tsp cloves

Pinch salt

So – First, preheat oven to 350 F.  Then mix together the shortening, molasses, and brown sugar.

And now, add that egg and beat it in.  Then, add your flour, baking soda, and spices.  Mix well.

Then comes the rolling part that I used to hate so bad (but really, truly thoroughly enjoy now).  Roll into 1 1/2 inch balls (or smaller if you like smaller cookies).  After you roll them into balls, roll them into white sugar so that they’re evenly coated.

So yummy.

Next, press with a fork, and throw into the oven for about 10 minutes (truthfully, I put mine in for 11, and they are perfect, but it depends on the oven).

You will know they are done when they look dry.  Not dry but not wet… get what I mean?  This is about what they look like:

Cael can pull himself up to standing now – all by himself.  I turned around the other day, and he was using the laundry basket as a stabilizer, just standing there.  He scared me half to death.  I can’t believe he’s doing that already.  He just started crawling this past week!  Ohmydear.  How fast they do grow… !  I really have to keep a close eye on him now.

Keep checking, because soon I’ll be posting a red velvet adventure, and some peanut butter love too.  🙂  Oh!  And linzer cookies too!  My mother-in-law bought me some heart cutters to make some (as I’ve never tried), and I really want to try them out!

Nannie’s Cinnamon Rolls

As much as I wish that it was the money-type-dough….  It’s not.  But this is the next best kind!  But!  Before we get to that…  Baking.  Who likes to do this?  Is there anyone else out there that just loves to bake?  Because I could bake sun-up to sun down if I had the people to bake for and the time to do so…  Just wanted to let you know about that.

Guess what!  Our little boy crawled for the first time yesterday!  It was a very exciting, but bittersweet moment.  Exciting because he’s crawling and growing up.  Bittersweet because he’s growing up SO fast.  I cannot believe how big he’s getting and how much he’s doing.  Have I mentioned that he claps and tries to sing along in church?  (Or that he’s a complete goof ball?)

Don’t you love the hairdo and expression?  🙂  Priceless.

Speaking of church, our church played the movie Courageous over the weekend.  It was a great movie.  I highly recommend it.  It is focusing on what God says of fathers in the Bible.  But it has great advice in it for mothers as well.  We are to bring up our children in a godly way, honouring Him through it all.  It’s a really hard task.  But completely achievable with the help of prayer and the Holy Spirit.  Joshua 25:15 – “As for me and my house, we will serve the Lord.”

On to these FAMOUS Cinnamon Rolls.  They are sooo good.  I’ve mentioned my grandmother in a few of my previous posts.  She was a real influence on my baking.  I have been baking as long as I’ve been standing (and probably before).  This recipe is one that she would let me help with right from the get-go.  It was our recipe (well, it’s hers, but it was our special time spent together eating the dough making them).  😉  We are a family that tends not to measure…  I know, I know…  Tsk tsk.  BUT – things just taste better when they aren’t perfect.  (Remember my gripe about perfectly round cookies?)  I love being able to judge how much of something I need to dump in without a measuring cup.  Don’t get me wrong, I still do measure a lot of things (especially for certain recipes when it is critical that certain amounts are exact), but I dump a lot of ingredients in the bowl willy-nillly.  Anyway, my ramble does have a point – we tend not to measure… i.e. – this recipe does not really exist.  I had to make my grandmother sit down and really think about what she puts in her cinnamon rolls, so I could write it down to have and to share.  So, here goes!

Nanny’s Cinnamon Rolls

1/2 cup sugar

1/2 cup margarine, softened

2 eggs

1/2 cup milk

1 tsp vanilla

Salt

2 1/2 – 3 cups flour

3 1/2 tsp baking powder

Stir together the margarine, eggs, milk, vanilla, and salt.  Once it is combined, add two cups of flour and the baking powder, stir. Add 1/2 cup flour, stir.  If the dough is too sticky to handle, add the rest of the flour.  If it seems okay, then don’t add any more.  Simple as that.

Now, this is one of those recipes that you just have to use a wooden spoon.  Well, I do at least.  My grandmother didn’t introduce me to a mixer until I was 10 or 11, so we used a wooden spoon to make most of the baked goods we made together.  And there are still a few recipes that I just have to use a wooden spoon to mix.  It doesn’t mix as thoroughly as our KitchenAid, but it gives these rolls a ‘homemade’ feel, and I get to feel quite nostalgic.

After you’re done mixing, slap it on a floured surface and roll into a rectangle (the dough should be about 1/2 inch thick, or whatever you prefer really).  Next – spread with margarine.  The more, the better.  Yum.

Then, sprinkle (very generously) brown sugar over the butter.  Don’t forget to spread it out and lick your fingers (and to wash your hands afterwards…).  Then sprinkle cinnamon over the sugar, to your own taste.  If you like raisins, you can throw some of those on top – SO good.  After all that, you can roll these puppies up.  From the long end.  They should look somewhat like this when they’re rolled:

I cut them into 12 rolls normally, but you can make them thicker/thinner if you want to.  Then put them on a greased cookie sheet, or in a greased 8X8 pan (depending on how you want them to turn out).

Oh!  Remember to cut the ends off, just a little slice off of either end to make them look better (and so that you have some extra dough to sample).  Nanny would save the ends for us every time she made them.  (And if I got through the door first, I’d quickly scarf down both ends so I didn’t have to share with my brother… Very sisterly of me eh?)

Bake at 350 for about 20 minutes, or until dough is set and slightly brown.

Blueberry Cake

Blueberries.  Mmmm, soo good.  They’re definitely a summer berry, but we had some frozen local berries, so I dug them out and whipped up a Blueberry Cake (below).

Did you know that these tiny little berries are absolutely great for you?  They are low-calorie, first of all.  Secondly, they have soluble fibres, minerals, vitamins AND anti-oxidants in each small, little blue ball.  They protect the body from cancer, aging, infections, and more!  These are only a few facts about blueberries.  There are many more wonders about them.

Anyway, they are great in baked goods too.  Especially cakes and muffins!  Here’s the great Blueberry Cake that we always make in our house (it also doesn’t last very long…).  My grandmother’s recipe.

Blueberry Cake
A nice crumby cake with punches of blueberries, topped with yummy crunchy sugar and cinnamon

Bluberry Cake
  1. 1/2 cup butter or margarine, softened
  2. 1 cup sugar
  3. 2 eggs, beaten
  4. 1 tsp lemon flavouring*
  5. 2 cups flour
  6. 3/4 cup milk
  7. 2 tsp baking powder
  8. AND 2 cups blueberries
Crumb Topping
  1. 6 Tbsp brown sugar
  2. 1 tsp cinnamon
Instructions
  1. Preheat oven to 375.
  2. Mix together margarine and sugar. Beat in eggs and flavouring. Add 1 cup flour, baking powder and milk - mix. Add the remaining flour and milk. Mix until smooth. Stir in blueberries.
  3. Pour into a greased 9x9 pan.
  4. Top with crumb topping
  5. Bake for 1 hour or until middle is set.
Notes
  1. *You can definitely use vanilla instead of lemon - totally up to you.
